Chocolate DGF

D G F (Distribution Générale de France) is a French Company specialised in the supply of pastry products for professionals. Under their own brand, DGF, they are gradually becoming one of Europe’s main suppliers of a comprehensive range of quality Chocolate Couvertures.

The range of DGF chocolate couvertures available from G J FOOD The Fine Food Connection are:

Dark Couverture - Bitter-sweet chocolate “Yucatan” 55% minimum cocoa.
- Bitter chocolate “Caraïbe“ 72% minimu cocoa.
- Chocolate batons 44% minimum cocoa, 5.3gr special for chocolate croissants.
- Chocolate paste, pure cocoa.
Milk Chocolate - Tropicana 34% minimum cocoa
White Chocolate - Louis Blanc 30% minimum cocoa

All the chocolates, except for the chocolate batons, are in small round buttons of about 10mm in diameter. The advantage of a small button is to melt quickly when required.

All of the DGF chocolates use a high grade “hard” cocoa butter. This helps to increase the fusion temperature, generally by several degrees above concurrent products, to between 32 and 34° C,. A higher temperature increases the fluidity of the melted chocolate and produces a better shine when the chocolate sets.
The cocoa liquor used by DGF for their chocolates comes from the Ivory Coast, Cameroon and Equator.
